Many people think Japanese food consists of only sushi but come on a Fabulous Food Trails Japanese Day and you’ll discover this marvellous, light, healthy cuisine covers a wide range of delicious foods. 

Fabulous Food Trails and celebrated Japanese chefs Yoshio Miyachi and Seiya Nakano have put together an informative, fun, hands-on day to show you how to cook and serve terrific Japanese food. 

Each Trail begins with some refreshing green rice tea as Yoshio or Seiya introduce the day and explain the basics of Japanese cooking. They will describe the essential ingredients to be found in every Japanese kitchen and tell you where to source them.

There is an art to rolling good sushi.  By the end of this day you will be able to prepare many different varieties of sushi and roll like an expert - in fact your sushi will look and taste as good as any you'd find in downtown Tokyo! Following this, Yoshio or Seiya will invite you to assist they create a variety of tasty recipes like traditional soups and other dishes found on a typical Japanese menu.

The day ends with a delicious Japanese lunch and a tasting of a variety of artisan sake.

Yoshio Miyachi was born in Osaka, Japan and came to Ireland four years ago. He acquired his love of good food from his mother and started cooking seriously when hs was in university, working in a large busy restaurant.  Cooking became his passion and in 1982 he opened his own restaurant in Japan which he ran for 10 years. Yoshio still has business interests in Japan, but in Ireland he cooks privately, distributing his sushi to discerning customers through specialist food shops and markets. He is one of a select number of chefs employed by the Japanese Embassy to prepare dishes for official receptions and dinners and for visiting dignatories.

Sieya Nakano is from Osaka and learnt his sushi making from a master Japanese chef.  In 2000 he moved to Sydney in Australia where he studied Business Administion along with studying at the French cuisine school, Le Cordon Bleu.  In 2005 he moved to France and completed the Superior Course at Le Cordon Bleu in Paris followed by an internship at the 3 Michelin star restaurant Le Doyan.  At the end of 2006 he moved to Dublin and soon started O'Shushi, making sushi for high-end outlets and doing private catering.  Seiya and Yoshio frequently work together on official receptions and dinners.
