South East - Food Trail - - - - - - Indulge yourself and spend a long weekend in the luscious countryside of the south-east, famous for the warm climate, its rivers, the beautiful valley, rolling hills, neat fishing villages and sandy coves. A typical South East Trail might include... - - - Day 1 We meet at noon in Kilkenny, have a delicious lunch and go through our itinerary before heading out on tour. Our first stop will be to a small cheesemaker who is fast gaining a great reputation locally and further afield making a hard and soft cheese - wonderful subtle flavours and textures. Here we will learn all abut the the process and time involved in making cheese and developing good flavour, and taste the cheese at various stages of maturation. Our coach will bring you to the beautiful country house, overlooking the Barrow valley situated halfway between Carlow town and Kilkenny city. At 7:30 we meet for a pre-dinner dring to give you an opportunity to taste a selection of wines recommended by our hosts to accompany your dinner. Using local and artisan produce cooked in a contemporary style - always delicious, always imaginative - dinner will be delicious affair! We will choose our wine from a small but select wine list. - - - Day 2 Breakfast gives plenty of choise, all accompanied by freshly baked breads, fresh juices, perfect coffee and a terrific choice of teas. The Enniscorthy Farmers' Market has got to be one of the best in the country. Everything there is made or grown locally, everyone selling lives near by. It is a co-operative, so the stall fee goes in to a central fund which is used to improve the market and the stands. It is in a beautiful position in the pretty, historical town of Enniscorthy. These producers are intensely proud of what they do, and are happy to tell us all about it. A fabulous Silver Service Picnic lunch nearby gives us a chance to taste all the good things from Enniscorthy market, as well as best quality foods from parts of the country we won't visit this weekend - this is a taste of Ireland on the table. Weather permitting we will take in a fishing trip with Jim Foley who comes from a big fishing family in Campile. He will bring us out near the Hook where you can throw out a few lines before dinner while he fills us in on the tradition of fishing in this area. That evening we will stay in the luxurious Dunbrody House, a captivating 1830's Georgian Manor House Hotel hiding amidst 300 acres of tranquil parkland on the idyllic Hook Peninsula, just 15 minutes east of Waterford City. A chic yet delightfully informal ambience permeates Dunbrody, where guests have the opportunity to experience sheer indulgence coupled with our tradition of courteous attentive service. Personal attention to detail is evident throughout - fresh flowers, crackling log and turf fires in period fireplaces, a cosy bar and a choice of individually styled spacious and elegant bedrooms. - - - Day 3 Go easy on the delicious breakfast in Dunbrody House... we have a great meal ahead! Later this morning at the cookery school Maura Dillon-Malone will give a demonstration on how to produce a delicious, tasty and simple Sunday brunch including fresh bread and even some fish (if we were successful the evening before!) in the unique Cookery School. We would suggest a walk through the grounds to prepare ourselves to eat a really tasty lunch. Snooze off that lunch while we whisk you back to our starting point...
